- 2 ripe yellow peaches – cored, peeled, and chopped
- 3/4 cup lemon juice
- 4 cups water, divided
- 1 cup sugar
- In a small saucepan, bring 2 cups water, peaches and sugar to a boil. Reduce heat; cover and simmer for 5-7 minutes or until peaches are tender. Remove from the heat. Cool, and strain. (The longer the simple syrup cools, the more peach flavor will be extracted, so cool for at least 15 minutes or let cool for an hour to extract more peach flavor.)
- Strain the lemon juice before adding to pitcher to remove excess pulp and any small seeds. In a large pitcher, combine the peach mixture, lemon juice and remaining water. Chill for at least 2 hours before serving, or overnight.
