Ingredients:
- 6 tablespoons unsalted butter
- 1/4 cup + 2 tablespoons (75 grams) brown sugar
- 1/4 cup (50 grams) granulated white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1-1/8 cups (140 grams) all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon cornstarch
- 1/4 teaspoon salt
- 1/2 cup + 2 tablespoons semi-sweet chocolate chips
- Preheat the oven to 375 degrees Fahrenheit.
- In an 8-inch cast iron skillet over medium heat, melt the butter.
- Turn down the heat to a simmer, and whisk in both the brown sugar and white sugar until evenly incorporated (some of the butter may still be separated, but that’s okay).
- Once the skillet has cooled, whisk in the egg and vanilla extract until evenly incorporated.
- Whisk in the baking soda, cornstarch, and salt. Switch to a spatula, and fold in the all-purpose flour until a soft dough forms (do not over-mix, or the cookie will be tough).
- Gently mix in 1/2 cup of chocolate chips, and press the cookie dough into the edges of the pan. Top with the remaining chocolate chips.
- Place in preheated oven and bake until light golden brown, about 14-16 minutes.
