Chocolate Chip Cookie Skillet



  • 6 tablespoons unsalted butter
  • 1/4 cup + 2 tablespoons (75 grams) brown sugar
  • 1/4 cup (50 grams) granulated white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1-1/8 cups (140 grams) all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1/2 cup + 2 tablespoons semi-sweet chocolate chips
  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In an 8-inch cast iron skillet over medium heat, melt the butter.
  3. Turn down the heat to a simmer, and whisk in both the brown sugar and white sugar until evenly incorporated (some of the butter may still be separated, but that’s okay).
  4. Once the skillet has cooled, whisk in the egg and vanilla extract until evenly incorporated.
  5. Whisk in the baking soda, cornstarch, and salt. Switch to a spatula, and fold in the all-purpose flour until a soft dough forms (do not over-mix, or the cookie will be tough).
  6. Gently mix in 1/2 cup of chocolate chips, and press the cookie dough into the edges of the pan. Top with the remaining chocolate chips.
  7. Place in preheated oven and bake until light golden brown, about 14-16 minutes.
  8. Let cool, and dig in!
