Margherita Pizza Paninis
4 slices of French Bread (or ciabatta, or even regular sandwich bread works in a pinch)
4 ounces fresh mozzarella cheese, sliced into 4 pieces
2 heaping tablespoons pizza sauce (this is normally the pizza sauce recipe I use, and I puree it)
2 basil leaves, left as whole, chopped, or in chiffonade
Olive oil or cooking spray
- Place 2 slices of bread onto a plate. Top each with 1 slice mozzarella, 1 heaping tablespoon pizza sauce, and half of the chopped basil. Top each with 1 more slice of mozzarella, then top the sandwiches with the bread.
- Microwave the sandwiches for 20 seconds.* Heat a large skillet over medium heat, and add a drizzle of olive or a little cooking spray. Once hot, add the sandwiches (or use a small skillet and cook them one at a time). Cook for 2-3 minutes on each side, or until golden brown. Slice and serve.
