Jalapeño Popper Grilled Cheese Sandwiches
Kosher salt and black pepper
4 slices white bread
2 tablespoons cream cheese
3 slices Cheddar cheese
2 tablespoons softened butter
- Preheat oven to 425 degrees. Place jalapeño on a baking sheet lined with aluminum foil. Drizzle with olive oil, and sprinkle with salt and freshly ground black pepper. Roast in the oven until the skin is blistered, 10-15 minutes.
- Take the jalapeño out of the oven and place into a plastic baggie for 5-10 minutes, to make the skin easier to peel. Pull off the skin, cut in half, remove the majority of the seeds, and mince. Set aside.
- To layer the sandwiches – top 2 slices of the white bread with 1 slice of Cheddar cheese each. Top that with 1 tablespoon of cream cheese, and some of the minced roasted jalapeño. Top each slice with another 1/2 slice of Cheddar cheese, and top each sandwich with a slice of bread.
- Heat a large skillet over medium heat. Butter both sides of each sandwich, and pan-fry until golden brown on each side, about 3-4 minutes total. Let sit for a minute before slicing.
