Crispy Fried Egg

Serves 1

Ingredients:

1 glug canola or vegetable oil (any type of oil will do)

1 egg

Kosher salt and freshly ground black pepper

Directions:

  1. Over high heat, heat a small skillet for 1 minute. Add a glug of oil and let it heat just until it begins to smoke, about 30 seconds. Add your egg and reduce the heat to medium high; stand back! Let it cook without disturbing it.
  2. After about one minute, the edges of the egg should be golden brown. Let it cook for 30 more seconds, then flip the egg over. Cook for 30 seconds, or until the bottom has just set. Transfer the egg to whatever you’re serving it on, and dig in! Eat immediately.
