Blueberry Pie


Pie crust for a double crus

3 pints (18 ounces) fresh or frozen blueberries

1-1/4 cups (251 grams) granulated sugar

1/2 cup (64 grams) all-purpose flour

Zest and juice of 2 limes

1 egg

1 tablespoon water

2 tablespoons coarse sugar (regular sugar can be substituted in a pinch), optional


  1. Preheat oven to 375 degrees. Roll out half of the pie dough, and form into the bottom of a 9′ pie dish. Set aside.
  2. In a large bowl, gently mix together the blueberries, sugar, flour, lime zest, and lime juice.
  3. Pour the blueberry mixture into the pie pan. Decorate as desired.*
  4. Bake for 55-60 minutes, or until the crust is nice and golden brown. If crust starts to overly brown, cover the top of the pie with aluminum foil. Cool completely before serving.
