Peanut Butter Chocolate Chip Granola Bars

Easy No Bake Peanut Butter-Chocolate Chip Granola Bars

Makes 10-12 granola bars

Ingredients:

1/2 cup light brown sugar

1/2 cup honey

1/2 cup peanut butter

1 teaspoon vanilla extract

2 cups crispy rice cereal

1-1/2 cups quick cooking oats

1/4 cup mini chocolate chips

Directions:

  1. In a large bowl, combine the crispy rice cereal and the quick-cooking oats. Set aside. Place the brown sugar and the honey in a small saucepan over medium heat. Bring to a boil, then reduce the heat to simmer and cook for 2 minutes. Remove from the heat, and add the peanut butter and vanilla extract. Stir until the mixture is smooth.
  2. Pour the peanut butter mixture over the dry ingredients and stir until everything is evenly coated. Take out a 9×13 pan, grease it really well with cooking spray, and pour the granola bar mixture into the pan. Press the granola bar mixture into an even layer and press the mixture up against one side of the pan, until the bars are about 3/4 of an inch in thickness.
  3. Sprinkle with the mini chocolate chips and press them in lightly. Let cool on the counter at room temperature before cutting, about 2 hours. Wrap in plastic wrap, and store at room temperature.
