Caramel Apple Pork Chops

Serves 2

Ingredients:

1 cup apple juice

1/2 cup soy sauce

4 (1/2 inch thick) pork chops

1/4 cup brown sugar

1/4 teaspoon salt

1/8 teaspoon black pepper

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup unsalted butter

1 small Granny Smith apple, peeled, cored, and cubed

Directions:

  1. In a large bowl, combine apple juice and soy sauce. Add the pork chops, and brine in the refrigerator overnight or at least 1 hour.
  2. Preheat oven to 350 degrees.
  3. Melt butter in a medium size skillet. Add sugar, salt, black pepper, cinnamon, and nutmeg. Add apples, and cover and cook until the apples are just tender (mine only took a minute or two).
  4. Cook the sauce uncovered in the skillet until slightly thickened. Place the pork chops into a casserole dish and pour the sauce over the pork chops. Bake for 20 minutes, or until the pork chops are cooked through.
